2tablespoonbasil, fresh, chopped
1/2teaspoonsalt
1/4teaspoonpepper
3cuprice, cooked, cooled
2eachtomatoes, chopped
1eachcucumber, seeded, chopped
1eachonion, red, small, chopped

Directions:

In a small bowl, whisk together oil, vinegar, basil, salt and pepper. Add rice, tomatoes, cucumber and onion; toss. Serve chilled.
