Buy Local Food : See if you can find out where your food has gone before it gets to your plate. You may be suprised by the results. Often it will make financial sense for companies to transport food enourmous distances by planes, boats and lorries. This dosn't take the environmental cost into account (which of course is likely to lead to greatly increased economic costs in the long term).


Kitchen Tip : On electric stovetops, use flat-bottomed pans that make full contact with the element. A warped or rounded pan may be a conversation piece, but will waste most of the heat.

1 1/2 c Quaker Oats, uncooked

-- (quick or old-fashioned) 1 1/4 c All-purpose flour

1/2 c Brown sugar, firmly packed

3/4 c Margarine or butter; melted

1 c Fresh or frozen blueberries

1/3 c Raspberry preserves

-OR- strawberry preserves 1 ts All-purpose flour

1/2 ts Grated lemon peel (optional)

Heat oven to 350 F. Combine oats, flour, brown sugar and margarine; mix until crumbly. Reserve 1 cup for topping; set aside. Press remaining oat mixture onto bottom of ungreased 8 or 9-inch square baking pan. Bake 13 to 15 minutes or until light golden brown. Cool slightly. In medium bowl, combine remaining ingredients; mix gently. Spread over crust. Sprinkle with reserved oat mixture, patting gently. Bake 20 to 22 minutes or until light golden brown. Cool completely; cut into bars. Store tightly covered.
