First invented by doctor atkins in the sixities, the atkins diet has been one of the most popular weight loss systems over the last few years. Although highly controversial, it supposedly allows weight reduction whilst allowing you to eat foods that are normally considered bad for diets, like fatty meat and hard cheeses.
With this diet you are encouraged to eat meat and fat, avoiding carbohydrates almost completely. Because of this, it is known as a low carbohydrate/high protein, weight loss program.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour.
With this diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods like meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil.

1 1/2cupflour, all-purpose
3/4cupsugar
1/4cupcocoa
2teaspoonbaking powder
1teaspoonbaking soda
1/2teaspoonsalt
2/3cupvanilla lowfat yogurt
2/3cupskim milk
1/2teaspoonvanilla extract
1powdered sugar (optional)

Directions:

Heat oven to 400 degrees. Line muffin cups (2 1/2 inch in diameter with paper bake cups. In medium bowl, stir together flour, granulated sugar, cocoa, baking powder, baking soda and salt; stir in yogurt, milk and vanilla just until combined. Do not beat. Fill muffin cups 2/3 full with batter.

Bake 15-20 minutes or until wooden pick inserted in center comes out clean. Cool slightly in pan on wire rack. Remove from pans. Sprinkle powdered sugar over tops of muffins, if desired. Serve warm. Store, covered, at room temperature or freeze in airtight container for longer storage.

NUTRITIONAL INFORMATION PER MUFFIN: 100 calories; 2 grams protein; 22 grams carbohydrates; 1 gram fat; 0 milligrams cholesterol; 200 milligrams sodium; 45 milligrams calcium.
