Most food, from fruit to fish, has a season -a time when it is abundant and at its best. Knowledge about food's seasons was once essential to survival and became culturally ingrained over the centuries. Today, we have all but lost this accumulated wisdom. Does this matter, in an age where technology can bring us anything we want to eat, whenever we want it?


Kitchen Tip : On electric stovetops, use flat-bottomed pans that make full contact with the element. A warped or rounded pan may be a conversation piece, but will waste most of the heat.

The Zone Diet
The Zone diet is a weight loss program initially created by Barry Sears in a series of books, publications and an associated website. The Zone diet is not distinctly a fat reduction diet, however many zone diet followers claim that they manage to lose a few pounds when following it.
The supposed science behind the Zone Diet is that if one were to limit the secretion of insulin and glucogen (two hormones produced naturally by your body), then anti-inflammatory chemicals are released which, in turn puts your body in a state of equilibrium which is more healthy than it normally is, this is referred to as 'the zone'.
Sears holds the theory that when your body is in this 'zone' it is much more efficient and, as a consequence, doesn't build up layers of fat.
The key technique of the system is to keep tight control over the exact ratio of carbs to proteins, and to take high levels of Omega 6 and omega 3 fish oils.

1 1/4 c GRAHAM CRACKER CRUMBS

1/3 c BUTTER (unsalted), melted

1/4 c BROWN SUGAR, firmly packed

1 ts CINNAMON

Blend all ingredients -together and press into -bottom of 10 Inch springform pan (and

-sides). Refrigerate about -30 Minutes. OREO FILLING 2 lb CREAM CHEESE, room

-temperature 1 1/2 c SUGAR

2 tb FLOUR

4 Extra large EGGS

2 lg EGG YOLKS

1/3 c WHIPPING CREAM

2 ts VANILLA

1 1/2 c OREO COOKIES, coarsely

-chopped 2 c SOUR CREAM

Preheat oven to 425-degrees. Beat cream cheese in large -bowl until smooth. Beat in -1-1/4 Cups sugar and the flour -until well blended. Beat -in eggs And egg yolks until mixture -is smooth. Stir in cream -and 1 Tsp. vanilla. Pour half of batter into -prepared crust. Sprinkle -with Chopped Oreos. Pour -remaining batter over, -smoothing with Spatula. Bake 15 mins. Reduce -temperature to 225-degrees, -and bake 50 Minutes, covering top

-loosely with foil if -browning too Quickly. Increase oven temperature to -350-degrees. Blend sour cream, remaining -1/4 cup sugar and remaining -1 Tsp. vanilla. Spread over -cheesecake. Bake 7 minutes. Refrigerate -immediately. Cover cake -with Plastic wrap and chill -overnight. SWISS FUDGE GLAZE 1 c WHIPPING CREAM

8 oz SEMI-SWEET CHOCOLATE,

-chopped 1 ts VANILLA
