Kitchen Tip : Match the size of the pan to the heating element; more heat will get to the pan and less will be lost to the surrounding air or found by the pan handle! A 6-inch pan on an 8-inch burner will waste over 40 percent of the energy.


Oven Tips : Cook with the oven door closed. A partially open door wastes energy, costs you money, and warms you instead of the food.

3 Tbsp Butter

5 Tbsp Flour

2 C Chicken Broth

2 Tbsp White Wine, Sherry, Or Lemon Juice

2/3 C Cream

2 Egg Yolks

Salt And Pepper -- to taste 4 Slices Toasted Bread

4 Thin Slices Ham

4 slice Chicken

Parmesan Cheese

Make a white sauce of butter, flour, chicken broth, and wine. Beat cream and egg yolks together and add to sauce. Season with salt and pepper. Top a slice of toast with slices of ham and chicken. Pour sauce over all and sprinkle with Parmesan cheese. Broil until cheese melts.

Makes 4 open-faced sandwiches.
