The Glycaemic Index Diet
The gi (or glycaemic index) diet is based on the glycaemic index, a list of types of food and a score representing the speed that the energy of the food type gets changed to sugar in your bloodstream. The believe is that long-acting food types (ie those foods with a low Gi score), keep you satiated for longer and help you to take in less food without feeling hungry.
It's also very useful for diabetics, as the low GI food types are beneficial in minimizing surges in blood sugar amount.

4.00 ea Ripe plantains

Oil for frying Salt Freshly ground pepper

Preheat the fryer. Peel the plantains and slice thinly on the bias. Fry in batches until golden brown, about 2 minutes, stirring occasionally. Remove from the oil and drain on paper towels. Season with salt and pepper.
