Buy Local Food : Cultivate an awareness of how far your food travels. When Rich Pirog, Food Systems Program Leader for the Leopold Center for Sustainable Agriculture at Iowa State University, tracked the miles traveled for 16 types of produce, he found that locally sourced fruits and vegetables such as apples, lettuce and tomatoes traveled an average of 56 miles, compared to 1,494 miles — nearly 27 times farther — for the same fruits and vegetables delivered through conventional retail channels. Things get stickier with combination foods, strawberry yogurt for example. Pirog came up with 2,216 miles by adding up the distance traveled for the yogurt’s milk, sugar and strawberries. That figure could be slashed by 90 percent if you buy plain yogurt and stir in some locally grown honey and fruit.

-Jo Ferry cmsj69b 1/2 c Shortening

1 c Brown sugar; packed

1 Egg

1/2 c Sour cream

1 1/2 ts Vanilla

3 c Chocolate chips; divided

1 3/4 c Flour

1/2 ts Salt

1/2 ts Baking powder

1/2 ts Baking soda

1/2 c Walnuts; chopped

Heat oven to 350. Cream shortening with sugar. Mix in egg, sour cream, vanilla. Melt 1 1/2 cups chocolate chips and blend with creamed mixture. Stir flour with salt, baking powder, baking soda. Add dry ingredients to creamed mixture, stirring until smooth. Fold in nuts and remaining chocolate chips. Chill dough 1/2 hour. For giant cookies, use ice cream scoop or 1/4 cup dough for each cookie. Place on 3 greased baking sheets. Flatten slightly to 3 inches. Bake for 10 to 12 minutes or unti still slightly soft in the center. Makes 16 giant cookies.
