The Atkins’ Diet
First invented by doctor atkins in the sixities, the atkins diet is still one of the most popular diets today. Having many well known film stars amongst its supporters, it enables fat reduction but still allows you to eat foods that are normally considered bad for diets, eg lamb and some dairy produce.
Unlike other diets, with the atkins diet you eat protein and fat, avoiding carbohydrates almost completely. Because of this, it is known as a low carbohydrate/high protein, diet.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour.
With the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods such as meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil.

1 refrigerated pie crust

1 cup milk

4 eggs -- slightly beaten

1/4 teaspoon dry mustard

1/8 teaspoon pepper

1 cup cooked ham -- cubed

1 1/2 cups Cheddar cheese -- shredded

1 cup frozen broccoli flowerets -- thawed

1 tablespoon onion -- chopped

Prepare pie crust according to package directions for *filled one-crust pie* using 9" pie pan. Heat oven to 350F.

In medium bowl, combine milk, eggs, dry mustard, and pepper; set aside. Layer ham, cheese, broccoli and onion in pie crust. Pour egg mixture over ham, cheese and broccoli. Bake for 40 - 50 minutes or until knife inserted in center comes out clean. Cool 5 minutes before serving.
