1 clove garlic -- very finely chopped

1 tsp fresh root ginger -- minced or grated

2 tbsp tomato puree

1 tbsp lemon juice -- fresh or bottled

1 tbsp freshly chopped flat-leaf parsley

1 tsp freshly chopped mint

1/2 tsp ground cumin

pinch cayenne pepper 650 g healthy eating lamb mince

1. Preheat the grill or barbecue. Put all the ingredients, except the lamb, into a bowl and mix together. Add the lamb and mix well using your hands.

2. Shape the mixture into eight sausages. Thread them onto skewers. Cook under the grill for about 10-12 minutes, turning them over from time to time. Serve with pitta bread, salad and yogurt.
