| Ingredients | | | 1 | each | onion, chopped | | | 1 | teaspoon | oil, olive | | | 2 | cup | potatoes, chopped | | | 1 | cup | leeks, white only, sliced | | | 4 | cup | stock | | | 1 | teaspoon | salt | | | 1/4 | teaspoon | pepper, white | | | 2 | tablespoon | chives, fresh, chopped | | | 1/4 | cup | parsley, fresh, chopped | | | | | | Directions:
| In a large pot, combine all the ingredients except the salt, pepper, chives & parsley. Cover the pot & bring to a boil. Lower heat & simmer for 30 minutes. Cool slightly, then puree. Season with salt & pepper & garnish with chives & parsley.
