4 Bananas Large

2 tb Sugar

2 tb Lemon Juice

1/2 ts Grated orange peel

3 oz Rum

2 tb Flour

1 tb Olive oil

Egg white (beaten stiff) 1/2 c Water

1/2 c Olive oil (for frying)

Cut bananas into halves lengthwise. sprinkle with sugar, lemon juice, orange peel, and Rum. Let stand for 2 hours. Make a batter of flour, water, and 1 tablespoon oil, mixing well, and blend in stiff egg white. Drain bananas, dip into batter and fry in hot olive oil until just golden in color. Sprinkle with sugar and serve hot.
